We create our Montreal Smoked Meat Pastrami starting with Federally Inspected, barrel-brine-cured whole beef briskets. Our meat is cooked in a Health Department Certified Kitchen Facility.
Our long time Deli experienced chef generously applies his secret dry rub of fragrant old world spices, completely encrusting the brine cured briskets before smoking them over Sugar Maple coals.
The combination of aromatic hardwood smoke and roasting spices imparts an irresistible flavour which is further intensified by cold curing the smoked meat for 5 days before steaming and serving.
We gently steam the Smoked Pastrami at your event until it is fork tender, before having our chef hand cut the hot briskets. Guests are always happy to watch as our Cutter/Chef expertly piles the juicy slices onto fresh hearth baked Rye Bread in true Montreal Deli Tradition!
The tastiest way to enjoy your Smoked Meat Pastrami is to have it cut ‟medium” so that the melting natural marbling of fat within the steaming brisket imparts its succulent special flavour to the tender meat.
For those who wish to have their meat on the leaner side, simply ask for a lean cut and our chef will be happy to trim the brisket to your liking.
You can enjoy your Smoked Meat Pastrami Sandwiches with a classic drizzle of yellow deli mustard or for those who would like to enhance their Smoked Hot Pastrami Experience, we suggest a zingy dollop of our house made Creamy Horseradish Hot Mustard.
