ARTISANAL “Old Fashioned” SMOKED MEAT PASTRAMI - Charcoal Smoked, Hand Cut, Served Hot

We create our Kosher Style “Old Fashioned” Smoked Meat Pastrami starting with Federally Inspected brined & cured whole beef briskets. Our meat is cooked in a Health Department Certified Kitchen Facility. The pickled briskets are blanched in a hot water bath flavoured with pure honey in much the same way a Montreal Bagel is boiled before baking.

Our long time “Jewish Deli” experienced chef generously applies his secret dry rub of fragrant old world spices completely encrusting the “honeyed” briskets. Our Cooking process creates a “thick, savoury smoke” by flame roasting the briskets at 800 degrees in our portable Charcoal Fired Catering Oven.

The combination of aromatic smoke and hot roasting spices imparts a special flavour to the briskets which is further intensified by cold curing the smoked meat for 5 days before serving. The result is the most amazing tasting Smoked Meat Pastrami!

Artisanal Smoked Meat BrisketWe gently steam our “Old Fashioned” Smoked Meat Pastrami at your event for a minimum of 2 hours until it is fork tender before having our chef hand cut the juicy briskets. Hand cutting smoked meat is considered by many to be an art form and a profession. Guests are always fascinated to watch as our Cutter/Chef expertly applies his craft in true Charcuterie- Deli tradition!

Appetites await in pleasurable expectation as steaming briskets of spice encrusted Smoked Meat Pastrami are thinly sliced and piled onto fresh hearth baked “crusty on the outside-soft on the inside” Jewish Rye Bread.

The tastiest way to enjoy your Smoked Meat Pastrami is to have it cut “Medium” so that the melting natural marbling of fat within the steaming brisket imparts its succulent goodness to the tender meat. For those guests who wish to have their meat on the leaner side, simply ask for a lean cut and our chef will be happy to trim the brisket to your liking.

Guests can enjoy their Smoked Meat Pastrami “neat” or with a classic drizzle of yellow mustard. For those who would like to enhance their smoked meat experience to the MAXX, we suggest a “zingy dollop” or “zesty schmear” of our house made Creamy Horseradish Hot Mustard. This highly addictive condiment presents an “oh so smooth tasting heat” with a really bold flavour that pairs extremely well with our Smoked Meat Pastrami.
